Veggie-ful Egg Breakfast Bowl
Who said veggies aren't a breakfast food? This breakfast bowl packed full of greens, healthy fats, and veggies will change your mind!
INGREDIENTS
a handful of greens (used spring mix), washed
1/4 cup pico de gallo, drained
1/4 avocado, sliced
olive oil, for cooking
1/3 of a yellow onion, diced
1/2 cup frozen cauliflower rice
2 eggs
Montreal steak spice
METHOD
1
prepare greens, pico de gallo, and slice avocado

add olive oil to a large skillet at medium-low heat

cook diced onions in the pan until fragrant and translucent, stirring occasionally to avoid burning and reach a carmelized-like texture

add more olive oil to the pan if needed and then
add in cauliflower rice to the pan and cook until tender

remove cauliflower rice and onions and set aside and cover

add more olive oil to the pan if needed and then fry the eggs. Spice eggs immediately with Montreal steak spice

serve on a large plate or bowl and add salt and pepper to taste. Garnish with parsley
